Banana Chocolate Chip Muffins

 

 

 

Ingredients:

  • Wet Ingredients:
    • 3 ripe bananas, mashed
    • 1/3 cup melted butter (or vegetable oil)
    • 1/2 cup granulated sugar
    • 1/4 cup brown sugar
    • 1 large egg
    • 1 teaspoon vanilla extract
  • Dry Ingredients:
    • 1 1/2 cups all-purpose flour
    • 1 teaspoon baking powder
    • 1 teaspoon baking soda
    • 1/4 teaspoon salt
  • Mix-Ins:
    • 1 cup chocolate chips (plus extra for topping)

Instructions:

  1. Preheat and Prepare:
    • Preheat your oven to 375°F (190°C).
    • Line a 12-cup muffin tin with liners or grease the cups with butter or non-stick spray.
  2. Mix Wet Ingredients:
    • In a large mixing bowl, mash the bananas until smooth.
    • Stir in the melted butter, granulated sugar, brown sugar, egg, and vanilla extract until well combined.
  3. Combine Dry Ingredients:
    • In a separate bowl, whisk together the flour, baking powder, baking soda, and salt.
  4. Combine Wet and Dry:
    • Gradually add the dry ingredients to the wet mixture. Stir gently until just combined (do not overmix).
    • Fold in the chocolate chips.
  5. Fill Muffin Tins:
    • Divide the batter evenly into the muffin cups, filling each about 3/4 full.
    • Sprinkle extra chocolate chips on top for a prettier finish.
  6. Bake:
    • Bake in the preheated oven for 18-22 minutes, or until a toothpick inserted in the center of a muffin comes out clean.
  7. Cool and Serve:
    • Allow the muffins to cool in the tin for 5 minutes, then transfer them to a wire rack to cool completely.
