Sugar-Coated Mini Doughnuts

 

 

Ingredients:

  • 2 cups all-purpose flour
  • 2 teaspoons baking powder
  • 1/4 teaspoon salt
  • 3 tablespoons sugar
  • 2 large eggs
  • 1/2 cup milk
  • 2 tablespoons butter (melted)
  • 1 teaspoon vanilla extract
  • Vegetable oil (for frying)
  • 1/2 cup granulated sugar (for coating)

Instructions:

  1. Prepare the Dough:
    • In a mixing bowl, whisk together the flour, baking powder, salt, and sugar.
    • In another bowl, whisk the eggs, milk, melted butter, and vanilla extract.
    • Gradually add the wet ingredients to the dry ingredients and mix until a soft dough forms. Do not overmix.
  2. Heat the Oil:
    • Heat vegetable oil in a deep pot or frying pan to 350°F (175°C). Ensure the oil is deep enough for frying.
  3. Shape the Dough:
    • Using a spoon or your hands, scoop small portions of dough (about the size of a ping pong ball) and gently roll them into balls.
  4. Fry the Dough Balls:
    • Carefully drop the dough balls into the hot oil, a few at a time, ensuring not to overcrowd the pot.
    • Fry for about 2-3 minutes, turning occasionally, until they are golden brown and cooked through.
  5. Coat with Sugar:
    • Remove the fried dough balls with a slotted spoon and place them on a paper towel-lined plate to drain excess oil.
    • While still warm, roll them in granulated sugar until fully coated.
  6. Serve:
    • Serve warm as a delightful snack or dessert.
