Stuffed Chicken Breast with Mushroom Sauce

 

 

Ingredients:

  • For the chicken:
    • 4 boneless, skinless chicken breasts
    • 1 cup shredded mozzarella or Gruyère cheese
    • 1 cup sautéed mushrooms (reserve a few for the sauce)
    • 1/4 cup cream cheese
    • 2 garlic cloves, minced
    • 1 tsp salt
    • 1 tsp black pepper
    • 1 tsp smoked paprika (optional)
    • 2 tbsp olive oil
  • For the mushroom sauce:
    • 2 tbsp unsalted butter
    • 1 cup sliced mushrooms
    • 2 garlic cloves, minced
    • 1/2 cup chicken stock
    • 1/2 cup heavy cream
    • 1 tsp Dijon mustard
    • Salt and pepper to taste
    • Fresh parsley for garnish

Instructions:

  1. Prepare the Filling:
    • In a bowl, mix shredded cheese, sautéed mushrooms, cream cheese, and garlic. Season with a pinch of salt and pepper.
  2. Stuff the Chicken:
    • Preheat your oven to 375°F (190°C).
    • Slice a pocket into each chicken breast, being careful not to cut all the way through.
    • Fill the pocket with the cheese and mushroom mixture and secure with toothpicks.
  3. Sear the Chicken:
    • Heat olive oil in an oven-safe skillet over medium-high heat.
    • Season the chicken with salt, pepper, and paprika. Sear each side for 3-4 minutes until golden brown.
  4. Bake the Chicken:
    • Transfer the skillet to the preheated oven and bake for 15-20 minutes, or until the chicken is cooked through and the internal temperature reaches 165°F (74°C).
  5. Prepare the Mushroom Sauce:
    • In a separate skillet, melt butter over medium heat. Add sliced mushrooms and garlic, and sauté until softened.
    • Deglaze the pan with chicken stock, scraping up any browned bits.
    • Stir in heavy cream and Dijon mustard. Simmer for 5 minutes until the sauce thickens.
    • Season with salt and pepper to taste.
  6. Assemble the Dish:
    • Remove the toothpicks from the chicken and place it on a serving plate.
    • Pour the mushroom sauce over the chicken and garnish with fresh parsley.
  7. Serve:
    • Serve warm with a side of mashed potatoes, roasted vegetables, or a fresh salad.
