How delicious! This recipe is different than my mother’s, but I like it even better!

Ingredients:

24 ounces canned salmon

2 eggs

6 green onions, chopped

1/2 cup grated Parmesan cheese

1/2 cup panko breadcrumbs

Juice of one lime

4 Tablespoon of olive oil

Instructions:

1. In a bowl, combine the canned salmon (drained and minced), eggs, chopped green onions, panko breadcrumbs, grated Parmesan and lima juice.

2. Mix the ingredients until well combined.
3.Form patties from the mixture and cut them to the desired size. You should be able to get 8 patties about 1 inch in size.

4. Heat olive oil in a frying pan over medium-high heat.
5.Carefully place the salmon burgers on the hot skillet and cook for about 7 minutes on each side or until golden brown and cooked through.

Remove the burgers from the pan and place them on absorbent paper to remove excess oil.
