Seeded Banana Bread Recipe

 

 

 

Ingredients:

  • For the Banana Bread:
    • 3 ripe bananas, mashed
    • 1/3 cup melted butter
    • 3/4 cup sugar
    • 1 egg, beaten
    • 1 teaspoon vanilla extract
    • 1 teaspoon baking soda
    • Pinch of salt
    • 1 1/2 cups of all-purpose flour
    • 1/2 cup whole wheat flour
  • For the Seed Mix:
    • 1/4 cup sunflower seeds
    • 1/4 cup pumpkin seeds
    • 2 tablespoons flax seeds
    • 2 tablespoons sesame seeds

Instructions:

1. Prepare the Oven and Pan:

  • Preheat your oven to 350°F (175°C). Grease a loaf pan and set aside.

2. Mix the Ingredients:

  • In a mixing bowl, mash the bananas with a fork until smooth. Stir in the melted butter.
  • Mix in the sugar, egg, and vanilla extract.
  • Sprinkle the baking soda and salt over the mixture and mix in.
  • Add the all-purpose flour and whole wheat flour, mix until just incorporated. Do not overmix.

3. Add Seeds:

  • Fold in half of the mixed seeds into the batter to distribute them evenly.

4. Prepare for Baking:

  • Pour the batter into the prepared loaf pan. Sprinkle the remaining seeds on top of the batter.

5. Bake:

  • Place in the oven and bake for 50-60 minutes, or until a tester inserted into the center comes out clean.

6. Cooling:

  • Let the bread cool in the pan for 10 minutes, then turn out onto a wire rack to cool completely.
