Ingredients:

  • Spring roll wrappers
  • 1/2 lb ground meat (beef, chicken, or pork)
  • 1/2 cup cheddar cheese, grated
  • 1 carrot, grated
  • 1/2 bell pepper, finely diced
  • 1/2 onion, finely chopped
  • 2 cloves garlic, minced
  • Salt and pepper to taste
  • Oil for frying

Instructions:

  1. Prepare the Filling:
    • In a skillet, cook the ground meat until browned. Drain excess grease.
    • Add onions, garlic, carrot, and bell pepper to the skillet. Cook until vegetables are soft.
    • Season with salt and pepper, then mix in the grated cheese until melted and combined. Let the filling cool.
  2. Assemble the Spring Rolls:
    • Place a spoonful of the meat mixture on each spring roll wrapper. Fold in the sides and roll tightly, sealing the edge with a bit of water.
  3. Fry the Spring Rolls:
    • Heat oil in a deep fryer or large saucepan to 375°F (190°C).
    • Fry the spring rolls in batches until golden brown, about 3-4 minutes.
    • Drain on paper towels.
  4. Serve:
    • Serve the spring rolls hot with your choice of dipping sauce, like sweet chili or a simple soy sauce mix.
