Creamy Custard with Raisins and Nuts
Ingredients:
- 1 liter (4 cups) whole milk
- 4 tablespoons custard powder (vanilla flavor or your choice)
- ½ cup sugar (adjust to taste)
- ½ cup condensed milk (optional, for extra creaminess)
- ½ cup raisins
- ¼ cup chopped nuts (like almonds, cashews, or pistachios)
- 1 teaspoon vanilla extract
- A pinch of saffron strands (optional, for added flavor and color)
Instructions:
- Prepare the Custard Base:
- In a small bowl, mix the custard powder with ½ cup of cold milk to form a smooth paste. Ensure there are no lumps.
- Heat the Milk:
- In a large saucepan, heat the remaining milk over medium heat. Stir frequently to prevent sticking.
- Sweeten the Milk:
- Add sugar and condensed milk (if using) to the hot milk and stir until dissolved.
- Cook the Custard:
- Gradually add the custard paste to the hot milk, stirring continuously to avoid lumps. Lower the heat and continue stirring until the mixture thickens (about 5-7 minutes).
- Add Flavors:
- Stir in vanilla extract, saffron strands (if using), raisins, and chopped nuts. Mix well and cook for another 2 minutes.
- Cool and Serve:
- Pour the custard into individual glasses or bowls. Let it cool at room temperature, then refrigerate for 2-3 hours until chilled.
- Garnish (Optional):
- Before serving, sprinkle additional chopped nuts or raisins on top for garnish.
