Moist Chocolate Cake
Ingredients:
For the Cake:
- 2 cups all-purpose flour
- 2 cups granulated sugar
- 3/4 cup unsweetened cocoa powder
- 2 teaspoons baking powder
- 1 1/2 teaspoons baking soda
- 1 teaspoon salt
- 1 cup whole milk
- 1/2 cup vegetable oil
- 2 large eggs
- 2 teaspoons vanilla extract
- 1 cup boiling water

- 1/2 cup unsalted butter
- 1/4 cup unsweetened cocoa powder
- 1/3 cup milk (whole milk or heavy cream)
- 3 cups powdered sugar
- 1 teaspoon vanilla extract

- Preheat your oven to 350°F (175°C). Grease and flour a 9×13-inch baking pan or line it with parchment paper.
- In a large bowl, combine the flour, sugar, cocoa powder, baking powder, baking soda, and salt.
- Add the milk, vegetable oil, eggs, and vanilla extract to the dry ingredients. Mix until combined.
- Gradually add the boiling water to the batter, stirring until smooth. The batter will be thin, but this is normal.
- Pour the batter into the prepared pan and bake for 30-35 minutes, or until a toothpick inserted into the center comes out clean.
- Allow the cake to cool completely in the pan before frosting.
2. Make the Fudge Frosting:
- In a medium saucepan, melt the butter over low heat. Stir in the cocoa powder until smooth.
- Remove from heat and whisk in the milk and vanilla extract.
- Gradually add the powdered sugar, whisking until the frosting is smooth and glossy.
- Spread the frosting over the cooled cake. Let it set for a few minutes before slicing.
