Creamy Potato and Sausage Soup

 

 

 

Ingredients:

  • 1 pound (450g) ground sausage (mild or spicy, as preferred)
  • 4 strips of bacon, chopped
  • 1 medium onion, diced
  • 2 garlic cloves, minced
  • 2 carrots, grated or finely chopped
  • 2 celery stalks, diced
  • 4 medium potatoes, peeled and diced
  • 4 cups chicken broth
  • 1 cup heavy cream
  • 1 teaspoon Italian seasoning
  • 1/2 teaspoon smoked paprika
  • Salt and pepper to taste
  • Optional: 1/2 cup shredded cheese (cheddar or Parmesan) for garnish
  • Fresh parsley for garnish

Instructions:

  1. Cook the Bacon and Sausage:
    • In a large pot or Dutch oven, cook the chopped bacon over medium heat until crispy. Remove the bacon with a slotted spoon and set aside.
    • Add the sausage to the pot and cook until browned, breaking it into small pieces. Remove any excess grease.
  2. Sauté Vegetables:
    • Add the onion, garlic, carrots, and celery to the pot. Sauté until softened, about 5 minutes.
  3. Add Potatoes and Broth:
    • Stir in the diced potatoes and pour in the chicken broth. Add Italian seasoning, smoked paprika, salt, and pepper.
    • Bring the mixture to a boil, then reduce heat and simmer for 15-20 minutes, or until the potatoes are tender.
  4. Finish with Cream:
    • Stir in the heavy cream and let the soup simmer for an additional 5 minutes. If using cheese, stir it in now to melt into the soup.
  5. Serve and Garnish:
    • Ladle the soup into bowls and top with crispy bacon, fresh parsley, and additional cheese if desired.
    • Serve hot with crusty bread or rolls on the side
