Creamy Potato and Sausage Soup

Creamy Potato and Sausage Soup
Ingredients:
- 1 pound (450g) ground sausage (mild or spicy, as preferred)
- 4 strips of bacon, chopped
- 1 medium onion, diced
- 2 garlic cloves, minced
- 2 carrots, grated or finely chopped
- 2 celery stalks, diced
- 4 medium potatoes, peeled and diced
- 4 cups chicken broth
- 1 cup heavy cream
- 1 teaspoon Italian seasoning
- 1/2 teaspoon smoked paprika
- Salt and pepper to taste
- Optional: 1/2 cup shredded cheese (cheddar or Parmesan) for garnish
- Fresh parsley for garnish
Instructions:
- Cook the Bacon and Sausage:
- In a large pot or Dutch oven, cook the chopped bacon over medium heat until crispy. Remove the bacon with a slotted spoon and set aside.
- Add the sausage to the pot and cook until browned, breaking it into small pieces. Remove any excess grease.
- Sauté Vegetables:
- Add the onion, garlic, carrots, and celery to the pot. Sauté until softened, about 5 minutes.
- Add Potatoes and Broth:
- Stir in the diced potatoes and pour in the chicken broth. Add Italian seasoning, smoked paprika, salt, and pepper.
- Bring the mixture to a boil, then reduce heat and simmer for 15-20 minutes, or until the potatoes are tender.
- Finish with Cream:
- Stir in the heavy cream and let the soup simmer for an additional 5 minutes. If using cheese, stir it in now to melt into the soup.
- Serve and Garnish:
- Ladle the soup into bowls and top with crispy bacon, fresh parsley, and additional cheese if desired.
- Serve hot with crusty bread or rolls on the side
