Cheesy Taco Soup
Ingredients:
- 1 pound (450g) ground beef
- 1 tablespoon olive oil
- 1 small onion, diced
- 2 garlic cloves, minced
- 1 can (14 oz) diced tomatoes
- 1 can (15 oz) corn kernels, drained
- 2 cups beef broth
- 1 cup heavy cream or half-and-half
- 1 teaspoon chili powder
- 1 teaspoon ground cumin
- 1/2 teaspoon smoked paprika
- 1/4 teaspoon cayenne pepper (optional for extra heat)
- 2 cups shredded cheddar cheese
- Salt and pepper to taste
- Green onions, sliced, for garnish
- Tortilla chips or crusty bread for serving
Instructions:
- Cook the Ground Beef:
- Heat olive oil in a large pot over medium heat.
- Add the ground beef and cook until browned, breaking it up into small pieces. Drain any excess fat.
- Sauté the Aromatics:
- Add the diced onion and garlic to the pot. Cook for 2-3 minutes until softened and fragrant.
- Build the Soup Base:
- Stir in the chili powder, cumin, smoked paprika, and cayenne (if using).
- Add the diced tomatoes, corn, and beef broth. Bring the mixture to a simmer.
- Add Creaminess:
- Reduce the heat and stir in the heavy cream. Let the soup simmer gently for 5-7 minutes.
- Incorporate Cheese:
- Gradually add the shredded cheddar cheese while stirring until it melts completely. Adjust the seasoning with salt and pepper to taste.
- Serve and Garnish:
- Ladle the soup into bowls and garnish with sliced green onions.
- Serve with tortilla chips or crusty bread for dipping
