Cheesy Taco Soup

 

 

Ingredients:

  • 1 pound (450g) ground beef
  • 1 tablespoon olive oil
  • 1 small onion, diced
  • 2 garlic cloves, minced
  • 1 can (14 oz) diced tomatoes
  • 1 can (15 oz) corn kernels, drained
  • 2 cups beef broth
  • 1 cup heavy cream or half-and-half
  • 1 teaspoon chili powder
  • 1 teaspoon ground cumin
  • 1/2 teaspoon smoked paprika
  • 1/4 teaspoon cayenne pepper (optional for extra heat)
  • 2 cups shredded cheddar cheese
  • Salt and pepper to taste
  • Green onions, sliced, for garnish
  • Tortilla chips or crusty bread for serving

Instructions:

  1. Cook the Ground Beef:
    • Heat olive oil in a large pot over medium heat.
    • Add the ground beef and cook until browned, breaking it up into small pieces. Drain any excess fat.
  2. Sauté the Aromatics:
    • Add the diced onion and garlic to the pot. Cook for 2-3 minutes until softened and fragrant.
  3. Build the Soup Base:
    • Stir in the chili powder, cumin, smoked paprika, and cayenne (if using).
    • Add the diced tomatoes, corn, and beef broth. Bring the mixture to a simmer.
  4. Add Creaminess:
    • Reduce the heat and stir in the heavy cream. Let the soup simmer gently for 5-7 minutes.
  5. Incorporate Cheese:
    • Gradually add the shredded cheddar cheese while stirring until it melts completely. Adjust the seasoning with salt and pepper to taste.
  6. Serve and Garnish:
    • Ladle the soup into bowls and garnish with sliced green onions.
    • Serve with tortilla chips or crusty bread for dipping
