Baked Cauliflower Cheese
Ingredients:
- 1 medium head of cauliflower, cut into florets
- 1 cup grated Parmesan cheese
- 1 cup shredded mozzarella cheese
- 1/2 cup heavy cream
- 1/2 cup whole milk
- 2 tablespoons unsalted butter
- 2 tablespoons all-purpose flour
- 1/4 teaspoon ground nutmeg (optional)
- Salt and black pepper to taste
- Fresh parsley for garnish (optional)
Instructions:
- Preheat the Oven:
- Preheat your oven to 375°F (190°C).
- Prepare the Cauliflower:
- Steam or boil the cauliflower florets for 5–7 minutes until slightly tender. Drain and set aside.
- Make the Cheese Sauce:
- In a saucepan, melt the butter over medium heat. Stir in the flour and cook for about 1 minute to create a roux.
- Gradually whisk in the milk and cream, stirring continuously until the mixture thickens.
- Add half of the Parmesan and mozzarella cheese. Season with nutmeg, salt, and pepper. Stir until the cheese is fully melted and the sauce is smooth.
- Assemble the Dish:
- Place the steamed cauliflower florets in a greased baking dish.
- Pour the cheese sauce evenly over the cauliflower.
- Sprinkle the remaining Parmesan and mozzarella cheese over the top.
- Optionally, add slices of fresh mozzarella for extra creaminess, as shown in the image.
- Bake:
- Bake in the preheated oven for 20–25 minutes, or until the top is golden brown and bubbly.
- Garnish and Serve:
- Garnish with chopped fresh parsley, if desired. Serve warm.
