Baked Cauliflower Cheese

 

 

 

Ingredients:

  • 1 medium head of cauliflower, cut into florets
  • 1 cup grated Parmesan cheese
  • 1 cup shredded mozzarella cheese
  • 1/2 cup heavy cream
  • 1/2 cup whole milk
  • 2 tablespoons unsalted butter
  • 2 tablespoons all-purpose flour
  • 1/4 teaspoon ground nutmeg (optional)
  • Salt and black pepper to taste
  • Fresh parsley for garnish (optional)

Instructions:

  1. Preheat the Oven:
    • Preheat your oven to 375°F (190°C).
  2. Prepare the Cauliflower:
    • Steam or boil the cauliflower florets for 5–7 minutes until slightly tender. Drain and set aside.
  3. Make the Cheese Sauce:
    • In a saucepan, melt the butter over medium heat. Stir in the flour and cook for about 1 minute to create a roux.
    • Gradually whisk in the milk and cream, stirring continuously until the mixture thickens.
    • Add half of the Parmesan and mozzarella cheese. Season with nutmeg, salt, and pepper. Stir until the cheese is fully melted and the sauce is smooth.
  4. Assemble the Dish:
    • Place the steamed cauliflower florets in a greased baking dish.
    • Pour the cheese sauce evenly over the cauliflower.
    • Sprinkle the remaining Parmesan and mozzarella cheese over the top.
    • Optionally, add slices of fresh mozzarella for extra creaminess, as shown in the image.
  5. Bake:
    • Bake in the preheated oven for 20–25 minutes, or until the top is golden brown and bubbly.
  6. Garnish and Serve:
    • Garnish with chopped fresh parsley, if desired. Serve warm.
