Recipe for Stuffed Pancakes (Parathas)
Ingredients:
- For the Dough:
- 2 cups all-purpose flour
- 1/2 teaspoon salt
- Water, as needed to form a smooth dough
- 2 tablespoons oil
- For the Filling:
- 1 cup mashed potatoes
- 1/2 cup grated cheese (optional)
- 2 tablespoons finely chopped onions
- 1 teaspoon chopped green chilies (optional)
- Salt and pepper to taste
- Fresh herbs like cilantro or parsley, chopped
- For Cooking:
- Additional oil or butter for frying
Instructions:
- Prepare the Dough:
- In a large bowl, mix the flour and salt. Gradually add water and mix until the dough comes together.
- Knead the dough for about 5-7 minutes until it is smooth and elastic. Drizzle with oil, cover, and let it rest for at least 30 minutes.
- Make the Filling:
- Combine all the filling ingredients in a bowl and mix well. Adjust seasoning to taste.
- Assemble the Pancakes:
- Divide the dough into equal-sized balls.
- Roll out each ball into a circle about 5-6 inches in diameter.
- Place a portion of the filling in the center of each rolled-out dough.
- Bring the edges together and seal, then gently flatten and roll out again to about the same size, taking care not to let the filling escape.
- Cook the Pancakes:
- Heat a skillet or griddle over medium heat and lightly oil it.
- Place the stuffed pancake on the skillet and cook until golden brown, about 2-3 minutes on each side. Press gently with a spatula to ensure even cooking.
- Repeat with the remaining dough and filling.
- Serve:
- Serve the pancakes hot, ideally with a side of yogurt, pickle, or fresh salad.
