Basic Potato Pancakes
Ingredients:
- 4 large potatoes, peeled and grated
- 1 medium onion, grated
- 2 eggs
- 2 tablespoons all-purpose flour
- Salt and pepper to taste
- Oil for frying
Instructions:
- Prepare Potatoes: After grating the potatoes, squeeze out as much liquid as possible to ensure they fry up crispy.
- Mix Ingredients: In a large bowl, combine the grated potatoes and onions. Add eggs, flour, salt, and pepper. Mix until well combined.
- Form Patties: Heat oil in a frying pan over medium heat. Spoon portions of the potato mixture into the hot oil, flattening them into pancakes using a spatula.
- Cook: Fry each pancake until golden brown and crispy, about 4-5 minutes per side.
- Serve: Drain on paper towels and serve hot with sour cream or applesauce.
