Ingredients:

  • 4 cups cabbage, finely shredded
  • 2 large eggs
  • 1/2 cup all-purpose flour
  • 1/4 cup green onions, finely chopped (plus extra for garnish)
  • Salt and pepper to taste
  • 2 tablespoons vegetable oil

Instructions:

  1. Prepare the Cabbage: In a large mixing bowl, combine the finely shredded cabbage with salt and let it sit for about 10 minutes. The salt helps to draw out moisture from the cabbage.
  2. Make the Batter: Beat the eggs in a small bowl. Add the beaten eggs to the cabbage. Sprinkle the flour over the cabbage and egg mixture, and stir until everything is well combined. Season with pepper and mix in the chopped green onions.
  3. Cook the Pancake: Heat the vegetable oil in a large skillet over medium heat. Once hot, pour the cabbage mixture into the skillet, spreading it out to form an even layer.
  4. Fry the Pancake: Cook for about 5-7 minutes on one side until it is golden and crispy. Carefully flip the pancake using a large spatula and cook the other side for another 5-7 minutes until it is also golden and crispy.
  5. Serve: Slide the pancake onto a plate, garnish with additional green onions, and cut into wedges. Serve hot with a dipping sauce if desired (soy sauce or a spicy mayo works well).
