Ingredients:

  • For the Crust:
    • 2 cups all-purpose flour
    • 1/2 cup sugar
    • 1/2 teaspoon salt
    • 3/4 cup unsalted butter, cold and cubed

    • 1 1/2 cups corn syrup (light or dark, based on preference)
    • 1/2 cup brown sugar, packed
    • 4 large eggs
    • 1/4 cup unsalted butter, melted
    • 1 1/2 teaspoons vanilla extract
    • 2 cups pecans, whole or chopped (as preferred)

Instructions:

  1. Prepare the Oven and Pan:
    • Preheat your oven to 350°F (175°C).
    • Line a 9×13-inch baking pan with parchment paper, leaving an overhang on the sides to lift out the bars easily after baking.
  2. Make the Crust:
    • In a medium bowl, mix together flour, sugar, and salt.
    • Add the cold cubed butter and use a pastry blender or your fingers to blend until the mixture resembles coarse crumbs.
    • Press the mixture firmly into the bottom of the prepared pan.
    • Bake in the preheated oven for 18-20 minutes until just golden.
  3. Prepare the Filling:
    • In a large bowl, whisk together the corn syrup, brown sugar, eggs, melted butter, and vanilla extract until smooth.
    • Stir in the pecans to evenly distribute them throughout the mixture.
  4. Assemble and Bake:
    • Pour the filling over the hot crust, spreading the pecans evenly.
    • Return to the oven and bake for about 25-30 minutes, or until the filling is set.
  5. Cool and Serve:
    • Allow the bars to cool completely in the pan on a wire rack.
    • Using the parchment overhang, lift the bars out of the pan and cut into squares.
