Tomato and Beef Noodle Soup Recipe
Ingredients:
- Noodles: 200g (any type you prefer)
- Beef slices: 200g (thinly sliced, marinated with a pinch of salt and soy sauce)
- Tomatoes: 3 (chopped)
- Eggs: 2 (lightly beaten)
- Garlic: 2 cloves (minced)
- Onion: 1 small (optional, finely chopped)
- Spring onions: For garnish
- Chicken or beef broth: 3 cups
- Soy sauce: 1 tablespoon
- Oyster sauce: 1 tablespoon
- Salt: To taste
- Sugar: 1 teaspoon (to balance the acidity of the tomatoes)
- Vegetable oil: 2 tablespoons
- Pepper: To taste
Instructions:
- Prepare the Noodles:
- Cook the noodles according to package instructions. Drain and set aside.
- Cook the Eggs:
- Heat 1 tablespoon of oil in a pan. Pour in the beaten eggs and scramble them lightly. Remove and set aside.
- Cook the Beef:
- In the same pan, add another tablespoon of oil. Sear the marinated beef slices until just browned. Remove and set aside.
- Prepare the Tomato Broth:
- In the same pan, sauté garlic and onion until fragrant.
- Add chopped tomatoes and cook until they soften and release their juices (about 5 minutes).
- Pour in the broth, soy sauce, and oyster sauce. Add sugar, salt, and pepper to taste. Bring to a boil.
- Combine:
- Add the cooked beef slices to the broth and simmer for 2–3 minutes.
- Add the scrambled eggs and stir gently to incorporate.
- Assemble the Dish:
- Place the cooked noodles in bowls. Ladle the hot tomato and beef soup over the noodles.
- Garnish with chopped spring onions.
- Serve:
- Serve hot and enjoy this hearty, flavorful soup!
