Pork Rib and Corn Soup Recipe

 

 

 

Ingredients:

  • Pork ribs: 500g
  • Corn: 2 cobs (cut into thick slices)
  • Carrots: 2 (peeled and chopped)
  • Tomatoes: 2 (cut into wedges)
  • Onion: 1 small (optional, for extra flavor)
  • Garlic: 2 cloves (optional, minced)
  • Spring onions or cilantro: Chopped, for garnish
  • Salt: To taste
  • Pepper: To taste
  • Water: 1.5 liters
  • Oil: 1 tablespoon

Instructions:

  1. Prepare the Pork Ribs:
    • Wash the ribs thoroughly.
    • Blanch the ribs in boiling water for 2–3 minutes to remove impurities. Rinse with cold water and set aside.
  2. Sauté (Optional):
    • Heat oil in a large pot. Add garlic and onion, sauté until fragrant.
  3. Cook the Soup Base:
    • Add the pork ribs to the pot and sauté briefly.
    • Pour in 1.5 liters of water and bring it to a boil. Skim off any foam.
  4. Add Vegetables:
    • Once the broth is clear, add corn, carrots, and tomatoes. Reduce to a simmer and cook for 40–60 minutes, or until the pork ribs are tender.
  5. Season:
    • Add salt and pepper to taste.
  6. Serve:
    • Garnish with chopped spring onions or cilantro. Serve hot with steamed rice or enjoy on its own.
