Rustic Beef and Macaroni Soup
Ingredients:
- 500g ground beef
- 1 cup macaroni pasta
- 1 large onion, diced
- 2 cloves garlic, minced
- 1 large carrot, peeled and diced
- 1 stalk celery, diced
- 1 yellow bell pepper, diced
- 4 cups beef broth
- 1 can (400g) diced tomatoes
- 1 teaspoon dried oregano
- 1 teaspoon dried basil
- Salt and pepper, to taste
- Fresh parsley, chopped for garnish
Instructions:
- Brown the Beef: In a large pot, cook the ground beef over medium heat until browned. Drain excess fat and set the beef aside.
- Sauté Vegetables: In the same pot, add a splash of oil and sauté the onion, garlic, carrot, celery, and bell pepper until they start to soften.
- Combine Ingredients: Return the beef to the pot. Add the diced tomatoes, beef broth, oregano, and basil. Bring the mixture to a boil.
- Cook Pasta: Add the macaroni to the pot and simmer until the pasta is tender, about 10-15 minutes.
- Season: Adjust the seasoning with salt and pepper to taste.
- Serve: Ladle the soup into bowls and garnish with freshly chopped parsley.
