Ingredients:

  • For the Shortbread:
    • 1 cup (225g) unsalted butter, softened
    • 1/2 cup (100g) sugar
    • 2 cups (260g) all-purpose flour
  • For the Caramel:
    • 1 cup (225g) unsalted butter
    • 1 cup (200g) brown sugar
    • 1 can (14 oz or 397g) condensed milk
    • 2 tbsp golden syrup or corn syrup
  • For the Chocolate Topping:
    • 1 1/2 cups (265g) dark chocolate, chopped
    • 1/2 cup (112g) unsalted butter

Instructions:

1. Prepare the Shortbread:

  • Preheat your oven to 350°F (175°C).
  • Line an 8-inch square baking dish with parchment paper.
  • Cream together the butter and sugar until light and fluffy.
  • Gradually mix in the flour until the mixture is crumbly but holds together when pressed.
  • Press the dough evenly into the prepared dish, and prick with a fork.
  • Bake for 20-25 minutes or until golden. Let cool.

2. Make the Caramel:

  • In a medium saucepan, combine butter, brown sugar, condensed milk, and golden syrup.
  • Bring to a boil over medium heat, stirring constantly.
  • Continue cooking and stirring for about 5 minutes or until the mixture thickens.
  • Pour the caramel over the cooled shortbread base and let set.

3. Prepare the Chocolate Topping:

  • Melt the chocolate and butter together in a saucepan over low heat or in the microwave, stirring until smooth.
  • Pour the chocolate over the caramel layer and spread evenly.
  • Allow the chocolate to set at room temperature or in the refrigerator.

4. Finishing Touches:

  • Once set, cut into squares or bars.
  • Optionally, sprinkle a little sea salt over the chocolate layer before it sets for a gourmet touch.
