Classic Baked Potatoes with Sour Cream and Chives
Ingredients:
- 4 large potatoes (Russet potatoes work best)
- 2 tablespoons olive oil
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1 cup sour cream
- 1/4 cup fresh chives, chopped
- Optional: Butter, shredded cheese, or bacon bits for extra toppings
Instructions:
- Prepare the Potatoes:
- Preheat your oven to 400°F (200°C).
- Wash and scrub the potatoes thoroughly. Pat them dry.
- Pierce the potatoes with a fork a few times to allow steam to escape during baking.
- Season and Bake:
- Rub each potato with olive oil, and season with salt and pepper.
- Place the potatoes directly on the oven rack or a baking sheet lined with foil.
- Bake for 50-60 minutes, or until the skin is crispy and the inside is soft. You can check by inserting a knife into the center—it should slide in easily.
- Prepare the Toppings:
- In a small bowl, mix the sour cream with half of the chopped chives. Set aside.
- Assemble the Baked Potatoes:
- Once baked, remove the potatoes from the oven and let them cool for a few minutes.
- Slice each potato open lengthwise and fluff the interior with a fork.
- Add a dollop of sour cream and chive mixture on top of each potato.
- Sprinkle additional chives and optional toppings like butter, shredded cheese, or crispy bacon bits.
- Serve:
- Serve immediately as a side dish or a light meal.
