  4. Press the Curds: Gather the corners of the cheesecloth and gently squeeze out excess whey. Mix in the salt while the curds are still warm.
  5. Form the Cheese: Press the curds into a mold or shape into a ball by hand. For firmer cheese, press under a weight for a few hours.
  6. Refrigerate: Refrigerate the cheese until firm, usually about a few hours, before slicing.
