Ingredients:

  • Orange juice: 3 cups (fresh or store-bought)
  • Sugar: 1 cup (adjust based on sweetness preference)
  • Cornstarch: 1/2 cup
  • Water: 1/2 cup (to dissolve the cornstarch)
  • Desiccated coconut: 1/2 cup (for coating)

Instructions:

  1. Prepare the Cornstarch Mixture:
    • In a small bowl, mix the cornstarch with 1/2 cup of water until fully dissolved. Set aside.
  2. Cook the Orange Mixture:
    • In a medium saucepan, combine the orange juice and sugar. Stir over medium heat until the sugar dissolves.
    • Gradually add the cornstarch mixture into the orange juice while stirring continuously to avoid lumps.
  3. Thicken the Mixture:
    • Continue to cook the mixture over medium heat, stirring constantly, until it thickens into a jelly-like consistency. This should take about 5-7 minutes.
  4. Set the Jelly:
    • Pour the thickened mixture into a square or rectangular dish lined with parchment paper. Spread it evenly.
    • Allow it to cool to room temperature, then refrigerate for 2-3 hours or until fully set.
  5. Cut into Cubes:
    • Once the jelly is firm, remove it from the dish and cut it into small cubes.
  6. Coat with Coconut:
    • Roll each jelly cube in desiccated coconut until evenly coated.
  7. Serve and Enjoy:
    • Arrange the coconut-coated jelly cubes on a serving plate. These can be stored in an airtight container in the refrigerator for up to a week.
