Ingredients:
- Orange juice: 3 cups (fresh or store-bought)
- Sugar: 1 cup (adjust based on sweetness preference)
- Cornstarch: 1/2 cup
- Water: 1/2 cup (to dissolve the cornstarch)
- Desiccated coconut: 1/2 cup (for coating)
Instructions:
- Prepare the Cornstarch Mixture:
- In a small bowl, mix the cornstarch with 1/2 cup of water until fully dissolved. Set aside.
- Cook the Orange Mixture:
- In a medium saucepan, combine the orange juice and sugar. Stir over medium heat until the sugar dissolves.
- Gradually add the cornstarch mixture into the orange juice while stirring continuously to avoid lumps.
- Thicken the Mixture:
- Continue to cook the mixture over medium heat, stirring constantly, until it thickens into a jelly-like consistency. This should take about 5-7 minutes.
- Set the Jelly:
- Pour the thickened mixture into a square or rectangular dish lined with parchment paper. Spread it evenly.
- Allow it to cool to room temperature, then refrigerate for 2-3 hours or until fully set.
- Cut into Cubes:
- Once the jelly is firm, remove it from the dish and cut it into small cubes.
- Coat with Coconut:
- Roll each jelly cube in desiccated coconut until evenly coated.
- Serve and Enjoy:
- Arrange the coconut-coated jelly cubes on a serving plate. These can be stored in an airtight container in the refrigerator for up to a week.
