Caramel-Glazed Donuts with Cream Filling Recipe

 

 

 

Ingredients:

For the Donuts:
  • 2 1/4 teaspoons (1 packet) active dry yeast
  • 1/4 cup warm water
  • 3/4 cup warm milk
  • 1/4 cup granulated sugar
  • 2 1/2 cups all-purpose flour
  • 1/4 teaspoon salt
  • 1 large egg
  • 3 tablespoons unsalted butter (softened)
  • Oil for frying
For the Custard Filling:
  • 1 1/2 cups whole milk
  • 1/4 cup granulated sugar
  • 3 large egg yolks
  • 3 tablespoons cornstarch
  • 2 teaspoons vanilla extract
For the Caramel Glaze:
  • 1/2 cup granulated sugar
  • 2 tablespoons butter
  • 3 tablespoons heavy cream
Topping:
  • 1/4 cup granulated sugar (for sprinkling)

Instructions:

Step 1: Make the Donut Dough
  1. Dissolve yeast in warm water and let it activate (about 5 minutes).
  2. In a mixing bowl, combine warm milk, sugar, yeast mixture, egg, butter, salt, and flour. Knead into a soft dough.
  3. Cover and let it rise for 1-1.5 hours, or until doubled in size.
  4. Roll out the dough on a floured surface to about 1/2-inch thickness. Cut donut shapes and a hole in the middle (or leave whole for filled donuts). Let them rest for 30 minutes.
Step 2: Make the Custard
  1. In a saucepan, heat milk until just simmering.
  2. In a bowl, whisk egg yolks, sugar, and cornstarch. Slowly add the hot milk to the egg mixture while whisking, then return the mixture to the saucepan.
  3. Cook over medium heat, stirring, until thickened. Remove from heat and stir in vanilla extract.
  4. Let cool, then transfer to a piping bag for filling.
Step 3: Fry the Donuts
  1. Heat oil in a deep pan to 350°F (175°C). Fry donuts in batches until golden brown, about 1-2 minutes per side.
  2. Drain on a wire rack.
Step 4: Make the Caramel Glaze
  1. Heat sugar in a pan over medium heat until melted and amber in color.
  2. Stir in butter until combined, then add cream while whisking until smooth. Remove from heat.
Step 5: Assemble
  1. Dip each donut top into the caramel glaze and let it set.
  2. Use a piping bag to fill each donut with custard through the side or center.
  3. Sprinkle the caramel glaze with sugar for a crunchy topping.
