Creamy Rice Pudding Recipe
Ingredients:
- 1 cup uncooked white rice (short or medium-grain works best)
- 2 cups water
- 4 cups whole milk (can substitute with 2% milk for a lighter version)
- 1/2 cup granulated sugar
- 1 teaspoon vanilla extract
- 1/2 teaspoon ground cinnamon (plus extra for garnish)
- Pinch of salt
- 1/4 cup heavy cream (optional for extra creaminess)
- Optional: Raisins, nuts, or a dash of nutmeg
Instructions:
- Cook the Rice:
- In a medium saucepan, combine the rice and water.
- Bring to a boil, then reduce heat to low, cover, and simmer for 10-12 minutes, or until the water is absorbed.
- Add the Milk and Sugar:
- Add the milk, sugar, and salt to the cooked rice.
- Cook over medium heat, stirring frequently, until the mixture thickens and becomes creamy (about 25-30 minutes).
- Flavor the Pudding:
- Stir in the vanilla extract, ground cinnamon, and heavy cream (if using).
- If adding raisins or nuts, stir them in now.
- Adjust Thickness:
- The pudding will thicken as it cools. If it’s too thick, stir in a little more milk to reach the desired consistency.
- Serve and Garnish:
- Spoon the rice pudding into bowls.
- Sprinkle with additional cinnamon or nutmeg for garnish.
- Serve warm or chilled, depending on your preference.
