Creamy Rice Pudding Recipe

 

 

 

Ingredients:

  • 1 cup uncooked white rice (short or medium-grain works best)
  • 2 cups water
  • 4 cups whole milk (can substitute with 2% milk for a lighter version)
  • 1/2 cup granulated sugar
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon ground cinnamon (plus extra for garnish)
  • Pinch of salt
  • 1/4 cup heavy cream (optional for extra creaminess)
  • Optional: Raisins, nuts, or a dash of nutmeg

Instructions:

  1. Cook the Rice:
    • In a medium saucepan, combine the rice and water.
    • Bring to a boil, then reduce heat to low, cover, and simmer for 10-12 minutes, or until the water is absorbed.
  2. Add the Milk and Sugar:
    • Add the milk, sugar, and salt to the cooked rice.
    • Cook over medium heat, stirring frequently, until the mixture thickens and becomes creamy (about 25-30 minutes).
  3. Flavor the Pudding:
    • Stir in the vanilla extract, ground cinnamon, and heavy cream (if using).
    • If adding raisins or nuts, stir them in now.
  4. Adjust Thickness:
    • The pudding will thicken as it cools. If it’s too thick, stir in a little more milk to reach the desired consistency.
  5. Serve and Garnish:
    • Spoon the rice pudding into bowls.
    • Sprinkle with additional cinnamon or nutmeg for garnish.
    • Serve warm or chilled, depending on your preference.
