Ingredients:

For the Beef Tips:

  • 1 kg beef tips or stew meat, cut into cubes
  • 2 tablespoons olive oil
  • Salt and pepper, to taste
  • 1 teaspoon garlic powder
  • 1/2 cup beef broth
  • 2 tablespoons Worcestershire sauce

For the Mashed Potatoes:

  • 6 large potatoes, peeled and cubed
  • 4 tablespoons butter
  • 1/2 cup milk or cream
  • Salt and pepper, to taste

For the Roasted Carrots:

  • 4 large carrots, peeled and sliced
  • 2 tablespoons olive oil
  • Salt and pepper, to taste
  • 1 teaspoon thyme

Garnish:

  • Fresh parsley, chopped

Instructions:

Beef Tips:

  1. Season the beef: In a large bowl, season beef tips with salt, pepper, and garlic powder.
  2. Brown the beef: Heat olive oil in a large skillet over medium-high heat. Add the beef and sear until browned on all sides, about 5-7 minutes.
  3. Simmer: Add beef broth and Worcestershire sauce to the skillet. Reduce heat to low, cover, and let simmer for 15-20 minutes, or until the beef is tender.

Mashed Potatoes:

  1. Cook the potatoes: Place the cubed potatoes in a large pot of salted water. Bring to a boil and cook until tender, about 15-20 minutes.
  2. Mash the potatoes: Drain the potatoes and return them to the pot. Add butter and milk. Mash until smooth and creamy. Season with salt and pepper to taste.

Roasted Carrots:

  1. Prepare the carrots: Preheat your oven to 400°F (200°C). Toss the carrots with olive oil, salt, pepper, and thyme.
  2. Roast the carrots: Spread the carrots on a baking sheet in a single layer. Roast in the preheated oven for 20-25 minutes, or until tender and slightly caramelized.

Assembly and Serving:

  1. Serve: Plate the creamy mashed potatoes and place the seared beef tips on top. Arrange the roasted carrots around the sides of the plate.
  2. Garnish: Sprinkle chopped fresh parsley over the beef and potatoes for a fresh, herbaceous finish.
