Cheesy Chicken Parmesan Roll-Ups”
Ingredients:
- 4 boneless, skinless chicken breasts
- 1 cup Italian breadcrumbs
- 1/2 cup grated Parmesan cheese
- 1 teaspoon garlic powder
- 1 teaspoon dried Italian herbs
- Salt and pepper, to taste
- 1 egg, beaten
- 1 cup marinara sauce
- 8 slices mozzarella cheese
- Fresh parsley, chopped for garnish
Instructions:
Preparing the Chicken:
- Preheat your oven to 375°F (190°C).
- Flatten the chicken: Place each chicken breast between two sheets of plastic wrap and pound them with a meat mallet until they are about 1/4 inch thick.
- Season the chicken: Sprinkle salt and pepper on both sides of the chicken breasts.
Breading:
- Mix breadcrumbs: In a shallow dish, combine Italian breadcrumbs, Parmesan cheese, garlic powder, and dried herbs.
- Dip the chicken: Dip each chicken breast first in the beaten egg, then coat thoroughly with the breadcrumb mixture.
Assembly:
- Add cheese: Place two slices of mozzarella cheese on each chicken breast.
- Roll them up: Carefully roll the chicken breasts up and secure them with toothpicks.
- Place in a baking dish: Arrange the chicken rolls in a greased baking dish.
Baking:
- Add sauce: Spoon some marinara sauce over each chicken roll-up.
- Bake: Place the dish in the oven and bake for 25 minutes, or until the chicken is cooked through and the breadcrumbs are golden.
Serving:
- Add more cheese: In the last 5 minutes of baking, add an extra slice of mozzarella cheese on top of each roll-up and return to the oven until the cheese is bubbly and golden.
- Garnish and serve: Remove the toothpicks, garnish with chopped fresh parsley, and serve hot.
