For the Crepes:
- 1 cup all-purpose flour
- 2 eggs
- 1 1/2 cups milk
- 1 tbsp sugar (optional)
- 1/2 tsp vanilla extract
- 2 tbsp melted butter
- Pinch of salt
For the Custard Sauce:
- 2 cups milk
- 2 egg yolks
- 1/4 cup sugar
- 1 tbsp cornstarch
- 1/2 tsp vanilla extract
- 2 tbsp butter
Instructions:
Step 1: Make the Crepes
- In a mixing bowl, whisk eggs and milk until smooth.
- Gradually add flour, sugar, and salt, whisking to avoid lumps. Stir in melted butter and vanilla.
- Heat a non-stick pan over medium heat. Lightly grease with butter.
- Pour a thin layer of batter (about 1/4 cup) and swirl to coat the pan.
- Cook for 1-2 minutes, flip, and cook the other side. Repeat for all batter.
Step 2: Prepare the Custard Sauce
- In a saucepan, heat milk over medium heat.
- In a bowl, whisk egg yolks, sugar, and cornstarch until smooth.
- Gradually add the warm milk to the egg mixture while whisking.
- Pour back into the saucepan and cook on low heat until thickened. Stir constantly to avoid lumps.
- Remove from heat, add vanilla and butter, and stir until smooth
