Stuffed Baked Rigatoni
Ingredients:
For the Rigatoni and Filling:
- 1 lb (450g) rigatoni pasta
- 1 lb (450g) ground beef (or a mix of beef and pork)
- 1 medium onion, finely chopped
- 2 garlic cloves, minced
- 1/2 cup grated Parmesan cheese
- 1/2 cup breadcrumbs
- 1 egg
- 1 tsp dried oregano
- 1 tsp dried basil
- Salt and pepper to taste
For the Sauce:
- 2 cups marinara sauce (homemade or store-bought)
- 1/4 tsp red pepper flakes (optional, for spice)
- 1/2 tsp sugar (to balance the acidity)

- 1 cup shredded mozzarella cheese
- 1/2 cup grated Parmesan cheese
- Fresh parsley, chopped, for garnish
Instructions:
- Cook the Rigatoni:
- Boil the rigatoni in salted water until just al dente (slightly firm). Drain and rinse with cold water. Set aside.
- Prepare the Meat Filling:
- Heat a skillet over medium heat and sauté the onion and garlic until softened.
- Add the ground beef and cook until browned. Drain excess fat and let cool slightly.
- In a bowl, combine the cooked meat, breadcrumbs, egg, Parmesan cheese, oregano, basil, salt, and pepper. Mix well to form a cohesive filling.
- Stuff the Rigatoni:
- Using a small spoon or piping bag, fill each piece of rigatoni with the meat mixture. Set the stuffed pasta aside.
- Prepare the Sauce:
- In a saucepan, heat the marinara sauce. Add red pepper flakes and sugar for extra flavor. Simmer for a few minutes, then remove from heat.
- Assemble the Dish:
- Preheat your oven to 375°F (190°C).
- Spread a thin layer of marinara sauce on the bottom of a baking dish.
- Arrange the stuffed rigatoni in a single layer on top of the sauce.
- Pour the remaining marinara sauce evenly over the pasta.
- Sprinkle mozzarella and Parmesan cheese on top.
- Bake:
- Cover the dish with foil and bake for 20 minutes.
- Remove the foil and bake for an additional 10 minutes, or until the cheese is bubbly and golden.
- Garnish and Serve:
- Sprinkle with fresh parsley before serving.
- Serve hot with a side of garlic bread or a fresh salad.
