Ingredients:
- 1 cup wild rice (uncooked, or 3 cups cooked wild rice)
- 2 tbsp olive oil or butter
- 1 medium onion, finely chopped
- 2 carrots, diced
- 2 celery stalks, diced
- 2 garlic cloves, minced
- 2 cups mushrooms, sliced (white, cremini, or shiitake)
- 4 cups vegetable or chicken broth
- 1 cup heavy cream (or coconut cream for a dairy-free version)
- 1 cup milk (or non-dairy milk alternative)
- 2 tbsp all-purpose flour (optional, for thickening)
- 1 tsp dried thyme
- 1 tsp garlic powder
- 1/2 tsp dried rosemary (optional)
- Salt and pepper, to taste
- 1 tbsp fresh parsley, chopped (plus extra for garnish)
Instructions:
- Cook Wild Rice:
- Cook the wild rice according to package instructions. Set it aside. If using pre-cooked rice, ensure it’s warmed before adding to the soup.
- Sauté Vegetables:
- Heat olive oil or butter in a large soup pot over medium heat.
- Add the onion, carrots, celery, and garlic. Sauté for 5–7 minutes, or until the vegetables are soft.
- Add Mushrooms:
- Stir in the mushrooms and cook for another 5 minutes until tender and slightly browned.
- Create the Base:
- Sprinkle the flour over the vegetables and stir well. Cook for 1–2 minutes, allowing the flour to coat the vegetables and eliminate its raw flavor.
- Add Broth and Seasonings:
- Gradually pour in the broth while stirring to avoid lumps.
- Add thyme, garlic powder, rosemary (if using), salt, and pepper.
- Bring to a gentle simmer.
- Incorporate Cream and Milk:
- Reduce the heat to low. Stir in the heavy cream and milk. Let the soup simmer for 10 minutes, stirring occasionally to avoid scorching.
- Add Cooked Wild Rice:
- Stir in the cooked wild rice and let the soup heat through for an additional 5 minutes. Adjust the thickness by adding more broth or milk if needed.
- Garnish and Serve:
- Remove the soup from heat. Taste and adjust seasoning if necessary.
- Ladle into bowls and garnish with fresh parsley.
