French Onion Soup Recipe

 

 

 

Ingredients

  • For the soup:
    • 4 large yellow onions, thinly sliced
    • 3 tablespoons unsalted butter
    • 1 tablespoon olive oil
    • 1 teaspoon sugar
    • 4 cloves garlic, minced
    • 1/2 cup dry white wine (optional)
    • 6 cups beef or vegetable broth
    • 2 tablespoons all-purpose flour
    • 1/2 teaspoon dried thyme (or a few sprigs fresh thyme)
    • Salt and freshly ground black pepper, to taste
  • For the topping:
    • 1 baguette, sliced into rounds
    • 2 cups grated Gruyère cheese (or Swiss cheese)
    • Fresh thyme sprigs for garnish (optional)

Instructions

  1. Caramelize the onions:
    • Heat butter and olive oil in a large pot over medium heat.
    • Add the sliced onions and sugar, cooking and stirring often, until the onions are deeply caramelized and golden brown (about 25-30 minutes).
  2. Add garlic and deglaze:
    • Stir in the minced garlic and cook for 1-2 minutes.
    • Add the flour and stir for another minute to coat the onions.
    • Deglaze the pot with the white wine (if using), scraping up any browned bits. Let it simmer for 2-3 minutes.
  3. Simmer the soup:
    • Add the broth, thyme, salt, and pepper.
