French Onion Soup Recipe
Ingredients
- For the soup:
- 4 large yellow onions, thinly sliced
 - 3 tablespoons unsalted butter
 - 1 tablespoon olive oil
 - 1 teaspoon sugar
 - 4 cloves garlic, minced
 - 1/2 cup dry white wine (optional)
 - 6 cups beef or vegetable broth
 - 2 tablespoons all-purpose flour
 - 1/2 teaspoon dried thyme (or a few sprigs fresh thyme)
 - Salt and freshly ground black pepper, to taste
 
 - For the topping:
- 1 baguette, sliced into rounds
 - 2 cups grated Gruyère cheese (or Swiss cheese)
 - Fresh thyme sprigs for garnish (optional)
 
 
Instructions
- Caramelize the onions:
- Heat butter and olive oil in a large pot over medium heat.
 - Add the sliced onions and sugar, cooking and stirring often, until the onions are deeply caramelized and golden brown (about 25-30 minutes).
 
 - Add garlic and deglaze:
- Stir in the minced garlic and cook for 1-2 minutes.
 - Add the flour and stir for another minute to coat the onions.
 - Deglaze the pot with the white wine (if using), scraping up any browned bits. Let it simmer for 2-3 minutes.
 
 - Simmer the soup:
- Add the broth, thyme, salt, and pepper.
