Ingredients:
- 1 1/2 cups almond flour
- 1/2 cup unsweetened cocoa powder
- 1/2 teaspoon baking soda
- 1/4 teaspoon salt
- 3 large eggs
- 1/3 cup unsweetened applesauce
- 1/4 cup coconut oil, melted
- 1/2 cup erythritol (or another granular sugar substitute)
- 1 teaspoon vanilla extract
- 1/4 cup unsweetened almond milk
- 1/4 cup chopped nuts (like pistachios or walnuts)
- Sugar-free chocolate chips or chunks
For the Chocolate Glaze:
- 1/4 cup sugar-free dark chocolate
- 1 tablespoon coconut oil
Instructions:
Muffins:
- Preheat your oven to 350°F (175°C) and prepare a muffin tin with liners or a light greasing.
- In a large bowl, mix together the almond flour, cocoa powder, baking soda, and salt.
- In another bowl, whisk together the eggs, applesauce, melted coconut oil, erythritol, and vanilla extract.
- Combine the wet and dry ingredients and stir until just mixed. Gradually add the almond milk to achieve a smooth batter.
- Fold in the chopped nuts and chocolate chips.
- Divide the batter among the muffin cups, filling each about 3/4 full.
- Bake for 20-25 minutes or until a toothpick inserted in the center comes out clean.
- Let the muffins cool in the pan for 10 minutes before removing to a wire rack to cool completely.
Chocolate Glaze:
- Melt the sugar-free dark chocolate with coconut oil in the microwave or over a double boiler until smooth and glossy.
- Drizzle the glaze over the cooled muffins and sprinkle with additional chopped nuts.
