Ingredients:

For the Cheese:

  • 1 pound (450g) block of semi-hard cheese (e.g., feta, mozzarella, cheddar, or halloumi), cut into 1-inch cubes

For the Marinade:

  • 1 cup (240ml) extra virgin olive oil
  • 2 garlic cloves, minced or thinly sliced
  • 1 tsp red chili flakes (adjust to taste)
  • 2 tbsp fresh parsley, finely chopped
  • 1 tsp dried oregano
  • 1 tsp dried thyme or rosemary
  • 1 tbsp whole black peppercorns
  • 1 tsp lemon zest (or zest of 1 lemon)
  • 1-2 tbsp white wine vinegar or fresh lemon juice (optional, for a tangy flavor)

Instructions:

Step 1: Prepare the Cheese

  1. Cut your cheese block into evenly sized cubes. Pat them dry with paper towels to remove excess moisture (this helps preserve the cheese longer in oil).

Step 2: Make the Marinade

  1. In a medium bowl, mix together olive oil, garlic, chili flakes, parsley, oregano, thyme, peppercorns, and lemon zest.
  2. If you prefer a tangy touch, stir in vinegar or lemon juice.

Step 3: Assemble the Jar

  1. Place the cheese cubes in a clean, sterilized glass jar.
  2. Pour the marinade over the cheese until it’s completely covered. Use a spoon to gently press the cubes down and ensure the oil fills all gaps.

Step 4: Marinate

  1. Seal the jar tightly with a lid and refrigerate.
  2. Allow the cheese to marinate for at least 24 hours for flavors to develop. For the best results, marinate for 2-3 days.

Step 5: Serve and Enjoy

  • Serve as part of an appetizer platter, in salads, on bread, or with crackers.
  • Store leftovers in the refrigerator and consume within 1-2 weeks.

Tips:

  • Cheese choice: Use cheeses that hold their shape well in oil. Avoid soft cheeses like cream cheese.
  • Oil reuse: After consuming the cheese, the leftover oil can be used as a flavorful dressing for salads or drizzling over bread.
  • Sterilization: Ensure the jar and lid are properly sterilized to avoid contamination.
