Ingredients:
For the Cheese:
- 1 pound (450g) block of semi-hard cheese (e.g., feta, mozzarella, cheddar, or halloumi), cut into 1-inch cubes
For the Marinade:
- 1 cup (240ml) extra virgin olive oil
- 2 garlic cloves, minced or thinly sliced
- 1 tsp red chili flakes (adjust to taste)
- 2 tbsp fresh parsley, finely chopped
- 1 tsp dried oregano
- 1 tsp dried thyme or rosemary
- 1 tbsp whole black peppercorns
- 1 tsp lemon zest (or zest of 1 lemon)
- 1-2 tbsp white wine vinegar or fresh lemon juice (optional, for a tangy flavor)
Instructions:
Step 1: Prepare the Cheese
- Cut your cheese block into evenly sized cubes. Pat them dry with paper towels to remove excess moisture (this helps preserve the cheese longer in oil).
Step 2: Make the Marinade
- In a medium bowl, mix together olive oil, garlic, chili flakes, parsley, oregano, thyme, peppercorns, and lemon zest.
- If you prefer a tangy touch, stir in vinegar or lemon juice.
Step 3: Assemble the Jar
- Place the cheese cubes in a clean, sterilized glass jar.
- Pour the marinade over the cheese until it’s completely covered. Use a spoon to gently press the cubes down and ensure the oil fills all gaps.

- Seal the jar tightly with a lid and refrigerate.
- Allow the cheese to marinate for at least 24 hours for flavors to develop. For the best results, marinate for 2-3 days.
