“Sizzling Teriyaki Chicken Skewers

Ingredients:

  • 500g chicken thighs, cut into cubes
  • Wooden skewers, soaked in water
  • Salt and pepper, to taste
  • Oil, for grilling

For the Teriyaki Glaze:

  • 1/4 cup soy sauce
  • 1/4 cup water
  • 2 tablespoons honey or brown sugar
  • 1 tablespoon rice vinegar
  • 1 garlic clove, minced
  • 1 teaspoon grated ginger
  • 1 tablespoon cornstarch dissolved in 2 tablespoons water

Garnish:

  • Chopped chives
  • Sesame seeds (optional)

Instructions:

1. Prepare the Chicken:

  • Season the chicken cubes with salt and pepper.
  • Thread the chicken pieces onto the prepared skewers.

2. Make the Teriyaki Glaze:

  • In a small saucepan, combine soy sauce, water, honey, rice vinegar, garlic, and ginger. Bring to a simmer over medium heat.
  • Add the cornstarch mixture to the saucepan and stir continuously until the sauce thickens.
  • Remove from heat and set aside.

3. Grill the Chicken:

  • Preheat the grill to medium-high heat. Lightly oil the grill grate.
  • Grill the chicken skewers for about 3-4 minutes on each side or until the chicken is cooked through and nicely charred.
  • Brush the teriyaki glaze over the chicken during the last few minutes of grilling.

4. Garnish and Serve:

  • Sprinkle the grilled chicken skewers with chopped chives and sesame seeds if using.
  • Serve hot with extra teriyaki sauce for dipping.
