“Sizzling Teriyaki Chicken Skewers
Ingredients:
- 500g chicken thighs, cut into cubes
- Wooden skewers, soaked in water
- Salt and pepper, to taste
- Oil, for grilling
For the Teriyaki Glaze:
- 1/4 cup soy sauce
- 1/4 cup water
- 2 tablespoons honey or brown sugar
- 1 tablespoon rice vinegar
- 1 garlic clove, minced
- 1 teaspoon grated ginger
- 1 tablespoon cornstarch dissolved in 2 tablespoons water
Garnish:
- Chopped chives
- Sesame seeds (optional)
Instructions:
1. Prepare the Chicken:
- Season the chicken cubes with salt and pepper.
- Thread the chicken pieces onto the prepared skewers.
2. Make the Teriyaki Glaze:
- In a small saucepan, combine soy sauce, water, honey, rice vinegar, garlic, and ginger. Bring to a simmer over medium heat.
- Add the cornstarch mixture to the saucepan and stir continuously until the sauce thickens.
- Remove from heat and set aside.
3. Grill the Chicken:
- Preheat the grill to medium-high heat. Lightly oil the grill grate.
- Grill the chicken skewers for about 3-4 minutes on each side or until the chicken is cooked through and nicely charred.
- Brush the teriyaki glaze over the chicken during the last few minutes of grilling.
4. Garnish and Serve:
- Sprinkle the grilled chicken skewers with chopped chives and sesame seeds if using.
- Serve hot with extra teriyaki sauce for dipping.
