Ingredients:

For the Custard:

  • 1 can (14 oz) sweetened condensed milk
  • 2 cups whole milk
  • 1 cup coconut milk
  • 3 tablespoons cornstarch
  • 1/2 cup shredded coconut (unsweetened or sweetened, depending on preference)
  • 1 teaspoon vanilla extract

For the Topping:

  • 1/2 cup shredded coconut (for garnish)

Instructions:

  1. Prepare the Custard:
    • In a medium saucepan, combine the sweetened condensed milk, whole milk, and coconut milk. Stir well to mix.
    • Dissolve the cornstarch in a small amount of cold water or milk, then whisk it into the milk mixture to avoid lumps.
  2. Cook the Custard:
    • Place the saucepan over medium heat, stirring constantly to prevent the mixture from sticking to the bottom.
    • Cook until the mixture thickens to a pudding-like consistency. This will take about 10-15 minutes.
  3. Add Flavor:
    • Once thickened, remove the pan from the heat and stir in the shredded coconut and vanilla extract.
  4. Assemble the Dessert:
    • Divide the custard evenly into serving cups or small glasses.
    • Allow it to cool slightly at room temperature, then refrigerate for at least 2 hours or until fully chilled.
  5. Add the Topping:
    • Before serving, sprinkle each dessert cup with shredded coconut for garnish.
  6. Serve:
    • Enjoy the creamy coconut dessert cold!
