Chocolate Almond Cookies Recipe
Ingredients:
- 1 cup all-purpose flour
- 1/2 cup unsweetened cocoa powder
- 1 teaspoon baking powder
- 1/4 teaspoon salt
- 3/4 cup granulated sugar
- 1/4 cup vegetable oil
- 2 large eggs
- 1 teaspoon vanilla extract
- 1 cup powdered sugar (for coating)
- Whole almonds (one for each cookie)
Directions:
- Mix Dry Ingredients:
- In a bowl, whisk together flour, cocoa powder, baking powder, and salt. Set aside.
- Prepare the Dough:
- In another large bowl, mix the granulated sugar, vegetable oil, eggs, and vanilla extract until well combined.
- Gradually add the dry ingredients to the wet ingredients, mixing until a dough forms. The dough will be quite sticky.
- Cover the dough and refrigerate for at least 4 hours, or overnight, to make it easier to handle.
- Shape and Bake:
- Preheat your oven to 350°F (175°C).
- Remove the dough from the refrigerator. Scoop out small portions and roll into balls.
- Roll each dough ball in powdered sugar until well coated.
- Place on a lined baking sheet, spacing them about 2 inches apart.
- Gently press a whole almond into the center of each dough ball.
- Bake for 10-12 minutes, or until the cookies are puffed and crinkles have formed.
- Cool:
- Allow the cookies to cool on the baking sheet for a few minutes before transferring them to a wire rack to cool completely.
