Chocolate Almond Cookies Recipe

 

 

 

Ingredients:

  • 1 cup all-purpose flour
  • 1/2 cup unsweetened cocoa powder
  • 1 teaspoon baking powder
  • 1/4 teaspoon salt
  • 3/4 cup granulated sugar
  • 1/4 cup vegetable oil
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1 cup powdered sugar (for coating)
  • Whole almonds (one for each cookie)

Directions:

  1. Mix Dry Ingredients:
    • In a bowl, whisk together flour, cocoa powder, baking powder, and salt. Set aside.
  2. Prepare the Dough:
    • In another large bowl, mix the granulated sugar, vegetable oil, eggs, and vanilla extract until well combined.
    • Gradually add the dry ingredients to the wet ingredients, mixing until a dough forms. The dough will be quite sticky.
    • Cover the dough and refrigerate for at least 4 hours, or overnight, to make it easier to handle.
  3. Shape and Bake:
    • Preheat your oven to 350°F (175°C).
    • Remove the dough from the refrigerator. Scoop out small portions and roll into balls.
    • Roll each dough ball in powdered sugar until well coated.
    • Place on a lined baking sheet, spacing them about 2 inches apart.
    • Gently press a whole almond into the center of each dough ball.
    • Bake for 10-12 minutes, or until the cookies are puffed and crinkles have formed.
  4. Cool:
    • Allow the cookies to cool on the baking sheet for a few minutes before transferring them to a wire rack to cool completely.
