Ingredients:

  • 2 boneless, skinless chicken breasts, cut into cubes
  • Salt and pepper, to taste
  • 2 tablespoons olive oil
  • 1 tablespoon Italian seasoning
  • 500 grams (about 1 pound) pasta (e.g., penne or fettuccine)
  • 2 tablespoons unsalted butter
  • 2 cloves garlic, minced
  • 1 cup heavy cream
  • 1 cup grated Parmesan cheese
  • Fresh parsley, chopped (for garnish)

Directions:

  1. Cook the Pasta:
    • Bring a large pot of salted water to a boil. Add the pasta and cook according to package instructions until al dente. Drain and set aside.
  2. Cook the Chicken:
    • Season the chicken cubes with salt, pepper, and Italian seasoning.
    • Heat olive oil in a large skillet over medium-high heat. Add the chicken and cook until golden brown and fully cooked, about 8-10 minutes. Remove from the skillet and set aside.
  3. Make the Alfredo Sauce:
    • In the same skillet, melt butter over medium heat.
    • Add minced garlic and sauté for about 30 seconds until fragrant.
    • Pour in the heavy cream and bring to a simmer. Reduce heat and continue simmering for about 4-5 minutes, or until the sauce thickens slightly.
    • Stir in the grated Parmesan cheese until the sauce is smooth and creamy.
  4. Combine and Serve:
    • Add the cooked pasta to the sauce, tossing to coat well.
    • Return the cooked chicken to the skillet, mixing to combine with the pasta and sauce.
    • Garnish with chopped fresh parsley before serving.
