Hearty Vegetable Potato Stew

 

 

 

Ingredients:

  • 4-5 medium potatoes (diced)
  • 2 medium carrots (sliced)
  • 2 celery stalks (chopped)
  • 1 medium onion (chopped)
  • 1 cup mushrooms (sliced)
  • 3 cups vegetable broth
  • 1 cup milk or cream (optional, for creaminess)
  • 2 tbsp olive oil or butter
  • 1 tsp dried thyme or mixed herbs
  • Salt and pepper to taste
  • Fresh parsley (for garnish)

Instructions:

  1. Prepare the Vegetables:
    • Heat olive oil or butter in a large pot over medium heat.
    • Sauté the onion, carrots, celery, and mushrooms until soft (about 5 minutes).
  2. Cook the Potatoes:
    • Add the diced potatoes, thyme, and broth to the pot.
    • Bring to a boil, then reduce heat and simmer for 20-25 minutes until the potatoes are tender.
  3. Optional Creaminess:
    • For a creamy stew, stir in the milk or cream during the last 5 minutes of cooking.
  4. Season and Garnish:
    • Add salt and pepper to taste.
    • Garnish with fresh parsley and serve warm with crusty bread.
