Hearty Vegetable Potato Stew
Ingredients:
- 4-5 medium potatoes (diced)
- 2 medium carrots (sliced)
- 2 celery stalks (chopped)
- 1 medium onion (chopped)
- 1 cup mushrooms (sliced)
- 3 cups vegetable broth
- 1 cup milk or cream (optional, for creaminess)
- 2 tbsp olive oil or butter
- 1 tsp dried thyme or mixed herbs
- Salt and pepper to taste
- Fresh parsley (for garnish)
Instructions:
- Prepare the Vegetables:
- Heat olive oil or butter in a large pot over medium heat.
- Sauté the onion, carrots, celery, and mushrooms until soft (about 5 minutes).
- Cook the Potatoes:
- Add the diced potatoes, thyme, and broth to the pot.
- Bring to a boil, then reduce heat and simmer for 20-25 minutes until the potatoes are tender.
- Optional Creaminess:
- For a creamy stew, stir in the milk or cream during the last 5 minutes of cooking.
- Season and Garnish:
- Add salt and pepper to taste.
- Garnish with fresh parsley and serve warm with crusty bread.
