  • 1 1/2 cups lukewarm water
  • 1/2 cup granulated sugar
  • 1 envelope active dry yeast
  • 2 eggs, slightly beaten

  • 1 cup evaporated milk
  • 7 cups bread flour
  • 1/4 cup shortening
  • Non-stick spray
  • Oil, for deep frying
  • Confectioners’ sugar for dusting

Instructions:

  1. Yeast Mixture: In a large bowl, dissolve sugar in warm water and then sprinkle yeast on top. Let it sit until frothy, about 10 minutes.
  2. Mix Wet Ingredients: Add eggs, salt, and evaporated milk to the yeast mixture. Mix thoroughly.
  3. Add Flour and Shortening: Gradually add half of the flour and beat with a wooden spoon until smooth. Add shortening, blending until incorporated, and then gradually add the remaining flour.
  4. Knead Dough: On a floured surface, knead the dough until smooth and elastic, about 5-7 minutes.
  5. First Rise: Place dough in a greased bowl, cover with a cloth, and let rise in a warm place until doubled in size, about 2 hours.
  6. Prepare to Fry: Heat oil in a deep fryer or large pot to 350°F (175°C).
  7. Shape Beignets: Roll out the dough to about 1/4 inch thickness. Cut into 2-inch squares. Cover with a cloth and let rise until slightly puffed, about 30 minutes.
  8. Frying: Fry the dough squares, a few at a time, until they are puffy and golden brown on both sides, about 2 to 3 minutes per batch. Use a slotted spoon to remove from the oil and drain on paper towels.
  9. Serve: Dust with confectioners’ sugar while still warm and serve immediately for best flavor.
