Honey-Glazed Roasted Carrots with Whipped Feta and Pistachio Garnish

Ingredients:

For the roasted carrots:

  • 1 kg of carrots, peeled and halved lengthwise
  • 2 tablespoons olive oil
  • Salt and pepper to taste
  • 1 teaspoon honey (optional for a glaze)

For the whipped feta sauce:

  • 200 grams feta cheese
  • 100 ml heavy cream
  • 1 clove garlic, minced
  • Salt and pepper to taste

For garnishing:

  • A handful of chopped pistachios
  • Fresh herbs (such as parsley or dill), finely chopped
  • Sesame seeds
  • A drizzle of olive oil

Instructions:

Roasting the carrots:

  1. Preheat your oven to 200°C (400°F).
  2. Toss the carrots in olive oil, salt, and pepper. Arrange them in a single layer on a baking sheet.
  3. Roast in the oven for 25-30 minutes or until tender and slightly caramelized. If you like a glaze, brush with honey 5 minutes before the end of roasting.

Making the whipped feta sauce:

  1. In a blender or food processor, blend the feta cheese, heavy cream, garlic, salt, and pepper until smooth and creamy.

Assembling the dish:

  1. Spread the whipped feta sauce on the bottom of a serving dish.
  2. Arrange the roasted carrots on top of the sauce.
  3. Garnish with chopped pistachios, fresh herbs, sesame seeds, and a drizzle of olive oil.
