Cauliflower Crust Pizza Casserole
Ingredients:
- 1 medium head of cauliflower, chopped into florets
- 3 large eggs
- 1/2 cup shredded mozzarella cheese (for the crust)
- 1 cup shredded mozzarella cheese (for topping)
- 1/2 cup grated Parmesan cheese
- 1 teaspoon garlic powder
- 1/2 teaspoon salt
- 1/2 teaspoon black pepper
- 1/2 cup pizza sauce
- Toppings of your choice (e.g., bell peppers, onions, olives, pepperoni, etc.)
Instructions:
- Prepare the Cauliflower Crust:
- Preheat the oven to 375°F (190°C).
- Steam or boil the cauliflower florets until tender.
- Mash or blend the cauliflower into a smooth consistency using a hand blender or food processor.
- Let the mashed cauliflower cool slightly, then mix in the eggs, 1/2 cup of mozzarella, Parmesan, garlic powder, salt, and pepper.
- Bake the Crust:
- Spread the cauliflower mixture evenly into a greased baking dish.
- Bake in the preheated oven for 20-25 minutes, or until the crust is firm and golden.
- Assemble the Pizza Casserole:
- Remove the crust from the oven and spread a layer of pizza sauce over it.
- Add your desired toppings evenly.
- Sprinkle the remaining 1 cup of mozzarella cheese over the toppings.
- Bake the Final Dish:
- Return the dish to the oven and bake for an additional 10-15 minutes, or until the cheese is melted and bubbly.
- Serve:
- Allow the casserole to cool for a few minutes before slicing and serving.
