Cauliflower Crust Pizza Casserole

 

 

 

Ingredients:

  • 1 medium head of cauliflower, chopped into florets
  • 3 large eggs
  • 1/2 cup shredded mozzarella cheese (for the crust)
  • 1 cup shredded mozzarella cheese (for topping)
  • 1/2 cup grated Parmesan cheese
  • 1 teaspoon garlic powder
  • 1/2 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/2 cup pizza sauce
  • Toppings of your choice (e.g., bell peppers, onions, olives, pepperoni, etc.)

Instructions:

  1. Prepare the Cauliflower Crust:
    • Preheat the oven to 375°F (190°C).
    • Steam or boil the cauliflower florets until tender.
    • Mash or blend the cauliflower into a smooth consistency using a hand blender or food processor.
    • Let the mashed cauliflower cool slightly, then mix in the eggs, 1/2 cup of mozzarella, Parmesan, garlic powder, salt, and pepper.
  2. Bake the Crust:
    • Spread the cauliflower mixture evenly into a greased baking dish.
    • Bake in the preheated oven for 20-25 minutes, or until the crust is firm and golden.
  3. Assemble the Pizza Casserole:
    • Remove the crust from the oven and spread a layer of pizza sauce over it.
    • Add your desired toppings evenly.
    • Sprinkle the remaining 1 cup of mozzarella cheese over the toppings.
  4. Bake the Final Dish:
    • Return the dish to the oven and bake for an additional 10-15 minutes, or until the cheese is melted and bubbly.
  5. Serve:
    • Allow the casserole to cool for a few minutes before slicing and serving.
