Pecan Toffee Squares Recipe

 

 

Ingredients:

  • 1 cup unsalted butter
  • 1 cup granulated sugar
  • 1 cup light brown sugar, packed
  • 1/4 teaspoon salt
  • 2 tablespoons water
  • 1 teaspoon vanilla extract
  • 1 cup pecans, roughly chopped
  • 1 cup semi-sweet chocolate chips (optional, for a chocolate topping)
  • Flaky sea salt (optional, for garnish)

Instructions:

  1. Prepare the Baking Dish:
    • Line a 9×13-inch baking pan or a sheet pan with parchment paper. Grease lightly with butter.
  2. Toast the Pecans (Optional):
    • Spread the pecans on a baking sheet and toast in a preheated oven at 350°F (175°C) for 5-7 minutes. This enhances their flavor. Set aside to cool.
  3. Cook the Toffee:
    • In a heavy-bottomed saucepan, melt the butter over medium heat.
    • Add granulated sugar, brown sugar, salt, and water. Stir continuously.
    • Bring the mixture to a boil and cook until it reaches 300°F (149°C) on a candy thermometer (hard crack stage). This will take about 10-15 minutes.
    • Remove from heat and stir in the vanilla extract.
  4. Assemble the Toffee:
    • Immediately pour the hot toffee mixture onto the prepared pan. Spread it evenly using a spatula.
    • Sprinkle the toasted pecans over the toffee while it’s still hot, pressing them gently to adhere.
  5. Optional Chocolate Topping:
    • If you prefer a chocolate layer, sprinkle the chocolate chips over the hot toffee. Let them sit for 1-2 minutes to melt, then spread evenly with a spatula.
  6. Cool and Set:
    • Let the toffee cool completely at room temperature, or place it in the refrigerator for faster cooling.
  7. Break into Squares:
    • Once the toffee is firm, break it into squares or pieces using your hands or a sharp knife.
  8. Optional Garnish:
    • Sprinkle flaky sea salt on top for a sweet and salty contrast.
