    • 1 cup sugar
    • 4 large eggs
    • 1 teaspoon vanilla extract
    • 2 cups all-purpose flour
    • 1 teaspoon baking powder
    • 1/2 teaspoon salt
    • 1 teaspoon ground cinnamon
    • 2 cups mixed candied fruits (such as cherries, pineapple, and citrus peel)
    • 1 cup mixed nuts (such as walnuts, almonds, and pecans), chopped
    • 1/2 cup raisins
    • 1/4 cup brandy or rum (optional)

Instructions:

1. Prepare the Ingredients:

  • If using liquor, soak the candied fruits and raisins in brandy or rum overnight to enhance the flavors. Drain before using.

2. Prepare the Cake:

  • Preheat your oven to 300°F (150°C).
  • Grease and line a loaf pan with parchment paper.

3. Mix the Cake Batter:

  • In a large mixing bowl, cream together butter and sugar until light and fluffy.
  • Beat in eggs one at a time, then stir in vanilla extract.
  • In another bowl, sift together flour, baking powder, salt, and cinnamon.
  • Gradually add dry ingredients to the creamed mixture, mixing until just combined.
  • Fold in the drained candied fruits, nuts, and raisins.

4. Bake the Cake:

  • Spoon the batter into the prepared pan and smooth the top.
  • Bake in the preheated oven for about 1.5 to 2 hours, or until a toothpick inserted into the center comes out clean.

5. Cool and Serve:

  • Let the cake cool in the pan for about 10 minutes, then turn out onto a wire rack to cool completely.
  • Slice and serve. The cake can be wrapped in foil and stored in an airtight container to develop flavors.
