Homemade Paneer or Fresh Cheese
Ingredients:
- 1 liter whole milk
- 2-3 tablespoons lemon juice or white vinegar
- Optional: herbs or spices for flavor (like thyme, oregano)
Instructions:
- Heat the Milk:
- Pour the milk into a large pot and heat it over medium heat. Bring it to a boil, stirring occasionally.
- Curdle the Milk:
- Once boiling, add the lemon juice or vinegar gradually while stirring.
- You’ll see the milk begin to separate into curds and whey.
- Strain the Curds:
- Turn off the heat and let it sit for a minute.
- Line a strainer with cheesecloth or a clean towel and pour the curdled milk into it. Drain off the whey.
- Shape the Cheese:
- Bring the corners of the cheesecloth together and twist to remove excess liquid.
- Place the cheese under a heavy object to flatten and set it. Leave it for 30 minutes.
- Cut and Serve:
- Once firm, cut the cheese into cubes. Sprinkle herbs or spices if desired.
