Phyllo Pastry with Cheese and Egg Mixture

 

 

 

Ingredients:

  • 1 pack phyllo dough (store-bought or homemade)
  • 2 cups feta cheese (or any crumbly cheese)
  • 2-3 eggs
  • 1 ½ cups milk or cream
  • Fresh parsley or spinach (chopped, optional)
  • ½ cup butter (melted) or olive oil
  • Salt and pepper to taste

Instructions:

  1. Prepare the Filling:
    • In a bowl, mix crumbled feta cheese, chopped parsley or spinach, and one egg. Add salt and pepper to taste.
  2. Layer the Phyllo Dough:
    • Preheat your oven to 180°C (350°F).
    • Line a baking tray with parchment paper.
    • Fold each sheet of phyllo dough accordion-style or scrunch it into folds. Place these in rows on the tray.
  3. Add the Filling:
    • Distribute the cheese mixture into the folds of the phyllo dough.
  4. Make the Custard:
    • Whisk together the milk (or cream) and remaining eggs. Add a pinch of salt.
    • Pour the custard evenly over the phyllo dough.
  5. Bake:
    • Bake in the preheated oven for about 30-40 minutes or until the phyllo dough is golden and crispy.
  6. Serve:
    • Let it cool slightly, slice into squares, and serve warm.
