Hearty White Bean and Sausage Soup
Ingredients:
- 1 tablespoon olive oil
- 1 large onion, chopped
- 2 garlic cloves, minced
- 2 carrots, diced
- 1 celery stalk, diced
- 1 teaspoon dried thyme
- 1/2 teaspoon dried rosemary
- 4 cups chicken or vegetable broth
- 2 cans (15 oz each) white beans, drained and rinsed
- 1 pound smoked sausage, sliced
- Salt and pepper, to taste
- Fresh parsley, chopped for garnish
Instructions:
- Heat the Olive Oil:
- In a large pot, heat the olive oil over medium heat. Add the chopped onion and cook until translucent, about 5 minutes.
- Sauté the Vegetables:
- Add the garlic, carrots, and celery to the pot. Cook for about 3 minutes, or until the vegetables start to soften.
- Season:
- Stir in the thyme and rosemary, cooking for another minute to release the flavors.
- Add Broth and Beans:
- Pour in the broth and bring the mixture to a boil. Once boiling, reduce the heat to low and add the white beans. Let simmer for about 20 minutes.
- Cook the Sausage:
- In a separate skillet, cook the sliced sausage until browned. Once cooked, add the sausage to the soup.
- Simmer:
- Continue to simmer the soup for an additional 10 minutes to blend the flavors. Season with salt and pepper to taste.
- Serve:
- Ladle the soup into bowls and garnish with chopped parsley. Serve hot for a nourishing and filling meal.
