Ingredients:

  • 200g (1.5 cups) Biscoff cookies (or Lotus biscuits), crushed
  • 3 tbsp melted butter (for the cookie layer)
  • 2 cups vanilla pudding or custard (store-bought or homemade)
  • 1 cup heavy whipping cream
  • 2 tbsp powdered sugar (for whipped cream)
  • 1 tsp vanilla extract (optional)
  • Biscoff cookies (for decoration, optional)
  • Crushed Biscoff cookies (for topping)

Instructions:

  1. Prepare the Cookie Base:
    • Crush the Biscoff cookies into fine crumbs using a food processor or a rolling pin.
    • Mix with melted butter until the mixture resembles wet sand.
  2. Layer the Dessert Cups:
    • Spoon 1-2 tablespoons of the cookie mixture into the bottom of small dessert cups and press lightly to form a base.
    • Add a layer of vanilla pudding or custard on top of the cookie crumbs.
  3. Add the Middle Layer:
    • Sprinkle more crushed cookies over the custard/pudding to form a middle cookie layer.
  4. Whip the Cream:
    • In a bowl, beat the heavy cream, powdered sugar, and vanilla extract until soft peaks form.
    • Pipe or spoon the whipped cream over the cookie and custard layers.
  5. Decorate:
    • Top with a whole Biscoff cookie and a sprinkle of crushed cookies for a finishing touch.
  6. Chill:
    • Refrigerate the cups for at least 30 minutes before serving to allow the layers to set.

Optional Variations:

  • Add a drizzle of melted Biscoff spread over the whipped cream for extra flavor.
  • Swap vanilla pudding with chocolate or cream cheese filling for a twist.
