Apple Crumble Cream Cake

 

 

 

 

Ingredients:

For the Crust and Crumble:
  • 2 cups all-purpose flour
  • 1/2 cup unsalted butter (cold, cubed)
  • 1/2 cup granulated sugar
  • 1 teaspoon baking powder
  • 1/4 teaspoon salt
  • 1 large egg
For the Apple Filling:
  • 4 medium apples (peeled, cored, and diced)
  • 2 tablespoons butter
  • 1/4 cup brown sugar
  • 1 teaspoon cinnamon
  • 1 tablespoon lemon juice
  • 1 tablespoon cornstarch (optional, for thickening)
For the Cream Layer:
  • 1 cup sour cream or Greek yogurt
  • 1/2 cup cream cheese (softened)
  • 1/4 cup sugar
  • 1 large egg
  • 1 teaspoon vanilla extract

Instructions:

  1. Prepare the Crust and Crumble:
    • Preheat your oven to 350°F (175°C) and grease or line a springform pan.
    • In a bowl, mix the flour, sugar, baking powder, and salt. Cut in the cold butter using a pastry cutter or fork until the mixture resembles coarse crumbs.
    • Add the egg and mix until the dough comes together. Reserve 1/3 of the mixture for the crumble topping.
    • Press the remaining dough into the bottom of the springform pan to form the crust.
  2. Prepare the Apple Filling:
    • In a skillet over medium heat, melt the butter. Add the diced apples, brown sugar, cinnamon, and lemon juice. Cook for 5-7 minutes until softened.
    • If the mixture is too runny, stir in the cornstarch and cook for another 2 minutes until thickened. Let it cool slightly, then spread over the crust.
  3. Prepare the Cream Layer:
    • In a bowl, beat the cream cheese, sour cream, sugar, egg, and vanilla extract until smooth.
    • Pour the cream mixture over the apple filling and spread it evenly.
  4. Add the Crumble Topping:
    • Crumble the reserved dough over the cream layer to create the crumble topping.
  5. Bake:
    • Bake in the preheated oven for 45-55 minutes, or until the top is golden and the cream layer is set.
    • Let the cake cool in the pan for 15 minutes before removing it. Transfer to a wire rack to cool completely.
  6. Serve:
    • Dust with powdered sugar if desired, and slice. Enjoy with coffee or tea!
