Ingredients:

For the Wontons:

  • 250g (1/2 pound) ground pork or chicken
  • 100g (1/4 pound) shrimp, finely chopped (optional)
  • 2 tablespoons soy sauce
  • 1 teaspoon sesame oil
  • 1 teaspoon grated ginger
  • 2 green onions, finely chopped
  • 1 egg (for binding)
  • 1/4 teaspoon white pepper
  • 30 wonton wrappers

For the Broth:

  • 6 cups chicken stock
  • 1 tablespoon soy sauce
  • 1 teaspoon sesame oil
  • 1 teaspoon grated ginger
  • 1 garlic clove, minced
  • Salt and pepper, to taste
  • Optional: sliced bok choy or spinach for garnish

For Garnish:

  • Chopped green onions
  • Fresh cilantro (optional)

Instructions:

  1. Make the Wonton Filling:
    • In a bowl, mix the ground pork (or chicken), shrimp, soy sauce, sesame oil, grated ginger, chopped green onions, egg, and white pepper until well combined.
  2. Assemble the Wontons:
    • Place a wonton wrapper on a clean surface.
    • Add about 1 teaspoon of filling in the center.
    • Moisten the edges of the wrapper with water, fold into a triangle, and press to seal. Bring the two bottom corners together and press them to seal. Repeat with the remaining wrappers and filling.
  3. Prepare the Broth:
    • In a pot, heat the chicken stock. Add soy sauce, sesame oil, grated ginger, and minced garlic. Let it simmer gently for about 10 minutes. Adjust seasoning with salt and pepper to taste.
  4. Cook the Wontons:
    • Bring a separate pot of water to a boil. Add the wontons and cook for about 4-5 minutes or until they float to the surface. Remove with a slotted spoon.
  5. Combine and Serve:
    • Transfer the cooked wontons to the broth. Add optional greens like bok choy or spinach if desired, and let them wilt for 1-2 minutes.
    • Ladle the soup into bowls and garnish with chopped green onions and cilantro.
