Lemon and Herb Baked Salmon with Asparagus

 

 

 

Ingredients:

  • 4 salmon fillets, about 6 ounces each
  • 1 bunch of asparagus, ends trimmed
  • 2 lemons, one sliced and one juiced
  • 4 tablespoons olive oil
  • 2 cloves garlic, minced
  • 1 teaspoon dried thyme
  • 1 teaspoon dried rosemary
  • Salt and pepper, to taste
  • Fresh parsley, chopped (for garnish)

Instructions:

  1. Preheat the Oven:
    • Preheat your oven to 400°F (200°C).
  2. Prepare the Asparagus:
    • Place the trimmed asparagus on a large baking sheet. Drizzle with 2 tablespoons of olive oil, sprinkle with salt and pepper, and toss to coat.
  3. Season the Salmon:
    • In a small bowl, mix the remaining 2 tablespoons of olive oil, lemon juice, minced garlic, thyme, and rosemary.
