Homemade Jalapeño Bacon Jam
Ingredients:
- 1 lb (450g) bacon, chopped 🥓
 - 1 small onion, finely diced 🧅
 - 3-4 jalapeños, finely chopped (remove seeds for less heat) 🌶️
 - 2 cloves garlic, minced 🧄
 - 1/2 cup brown sugar 🍯
 - 1/4 cup maple syrup 🍁
 - 1/4 cup apple cider vinegar 🍏
 - 1/2 teaspoon smoked paprika
 - 1/2 teaspoon black pepper
 - 1/4 teaspoon salt 🧂
 
Instructions:
- Cook the bacon: In a large skillet over medium heat, cook chopped bacon until crispy. Remove with a slotted spoon and drain excess fat, leaving about 2 tablespoons in the pan.
 - Sauté the aromatics: Add the diced onion and jalapeños to the pan. Cook until soft, about 5 minutes. Stir in the garlic and cook for 1 more minute.
 - Caramelize: Add brown sugar, maple syrup, apple cider vinegar, smoked paprika, black pepper, and salt. Stir well.
 - Simmer: Return the cooked bacon to the skillet and reduce the heat to low. Simmer for 15-20 minutes, stirring occasionally, until thick and jam-like.
 - Blend (optional): For a smoother consistency, pulse the jam a few times in a food processor.
 - Cool & Store: Let cool before transferring to a jar. Store in the fridge for up to 2 weeks.
